During the olive harvest season (From August to November), we ensure the collection of two best-known Tunisian varieties : Sorting of raw material to ensure the best quality of our olives. Nowadays, 95% of olive groves in Tunisia are cultivated without chemical treatments. In the fields, the olives are still harvested by hand. Take a walk in the hinterland and you will see the double ladders of pickers and pickers everywhere, armed with rakes or special gloves to loosen the fruit branch by branch. Traditional oil mills are also still numerous. The olives are ground there under a stone millstone driven by a dromedary (or more often, today, an electric motor); then the olive paste is pressed between braided esparto discs.
